Ingredients
1 tsp extra-virgin olive oil
4 oz chicken breast
Salt and pepper to taste
1 small shallot, chopped
¼ cup chicken broth
1½ cups mixed chopped vegetables
1 medium roasted sweet potato
Instructions
Heat oil in a small skillet over medium heat.
Season chicken with salt and pepper. Add to skillet and cook until cooked through, 4-5 minutes per side. Transfer to a plate.
Add shallot to skillet and cook until softened, 1-2 minutes. Add broth and stir, scraping up browned bits. Pour over chicken.
Add ½ inch of water and vegetables to a microwave-safe bowl. Cover and microwave until crisp-tender, 2-4 minutes. Serve with sweet potato.
