Ingredients
1 cup cooked lentils
1 cup low-sodium vegetable broth
1 cup mixed frozen vegetables
½ tsp curry powder
1 tbsp chopped fresh cilantro
Salt and pepper to taste
Instructions
Heat lentils, broth, vegetables, and curry powder in a small pot over medium heat.
Simmer until heated through, stirring occasionally, about 10 minutes.
Season with salt and pepper to taste.
Top with fresh cilantro and serve hot.
