Ingredients
1 tsp sesame oil
6 oz extra-firm tofu, cut into cubes
½ cup chopped onion
1 tsp grated peeled fresh ginger
2 cups frozen stir-fry vegetables
2 tbsp vegan stir-fry sauce
½ cup cooked brown rice
1 tsp tamari
Instructions
Heat oil in a medium skillet over medium-high heat.
Add tofu and cook until browned in spots, about 4 minutes.
Add onion, ginger, and vegetables and stir-fry until crisp-tender, 3-4 minutes.
Add stir-fry sauce and cook until heated through, about 1 minute, adding a splash of water if dry.
Serve over rice. Sprinkle with tamari.
