Ingredients
2 eggs
1 egg white
Salt and pepper to taste
1 tsp extra-virgin olive oil
1 cup packed fresh spinach
2 tbsp crumbled feta
1 high-fiber English muffin, toasted
Instructions
Whisk eggs and egg white in a small bowl. Season with salt and pepper.
Heat oil in a nonstick skillet over medium heat.
Add spinach and toss until wilted, about 1 minute.
Add eggs and feta and cook until eggs are set, about 3 minutes.
Serve with toasted English muffin.
